Lime and Chilli Beef Salad
Serves 4
450gm round steak sliced thinly
cos lettuce
200gm rice vermicelli (or mung bean noodles)
2 celery sticks sliced thinly or grated
1 carrot grated
100gm bean sprouts
1/4 cup lime juice
4 shallots
1/4 cup sweet chilli sauce or 1 tsp chilli, 1 1/2 tbsp honey, 1 tbsp white wine vinegar
Prepare rice vermicelli or noodles according to packet. Using oil in a fry pan cook the steak. Remove from pan. Using same pan, put the lime juice, shallots and sweet chilli sauce and heat until the shallots are soft. Put aside. Chop lettuce and mix lettuce, noodles, carrots, bean sprouts, celery together. Put steak on top and pour over sauce.
