Lemon Coconut Slice
250g (8oz.) milk arrowroot biscuits
1/2 cup sweetened condensed milk
125g (4oz.) butter or margarine
1 tsp. Grated lemon rind
1 cup coconut
1. Place condensed milk and butter in a small saucepan, stir over low heat until combined.
2. Crush biscuits, add lemon rind and coconut.
Mix well into warm milk mixture.
3. Press into 11 x 7 tin. Refrigerate 1 hour before Icing.
Icing:
1 1/2 cups Icing Sugar
3 tbs. Lemon Juice
1/2 oz. (15g) butter
2 tbs. Coconut
Mix butter, icing sugar and juice. Spread over slice and sprinkle with coconut
