Lemon Banana Tart
Pastry:
1 heaped tablespoon butter
2 good tablespoons sugar
2 cups self-raising flour
1 egg
Filling:
1 cup sugar
1 large lemon
1 cup water
6 bananas
2 teaspoons custard powder
Pastry:
1. Beat butter and sugar, add egg then flour. Press into large tart plate and bake until golden brown.
Filling:
2. Place water and sugar in saucepan, bring to the boil, mix custard powder and juice of lemon.
3. Add to water and sugar. Stir till thick. Grate lemon skin and add, allow mixture to cool. Slice banana and add. Place filling in tart shell, top with whipped cream.
