Lemon and Herb Roast Chicken
1.3-1.8kg roasting chicken
1/4 cup chopped onion
2 tbsp butter
juice of 1 lemon
1/4 tsp paprika
1/2 tsp salt
1 tbsp fresh parsley (1 tsp of dried)
1/4 tsp thyme leaf
Rinse chicken and pat dry, remove any excess fat. Place onion in the cavity of the chicken and rub the skin with the butter. Place chicken in the slow cooker. Squeeze the juice of the lemon over the chicken and sprinkle with the remaining ingredients. Cover and cook on low setting 8 – 10 hours.
