Lamb Shanks with Red Lentils and Sweet Potato
1/2 cup red lentils (100g)
1 cup beef stock
1 Tbsp oil
4 large french cut lamb shanks (trimmed of any visible fat)
1 medium onion sliced
2 garlic cloves crushed
1 Tbsp curry paste
1 can diced tomatoes
1 large sweet potato, chopped
1 red capsicum, chopped
Place lentils with stock in Slow cooker and cook on high 1 – 1 1/2 hours or until just tender.
Heat oil in pan. Cook the shanks (two at a time) over medium heat until well browned on all sides. Drain and put in slow cooker with lentils. Add sweet potato.
Add onion to pan. Cook over medium heat until golden brown. Stir in garlic, curry paste and capsicum. Cook for 1 minute – or until fragrant. Add tomatoes to onion mix and stir to combine. Pour mix into slow cooker.
Cover and cook on low 6-8 hours (4-6 hours high).
