Jerked Chicken
2 pounds of chicken thighs or legs
1/2 cup minced green onion
1/4 cup orange juice
1 tbsp minced ginger (or 1/8 tsp ground ginger)
1 to 3 minced hot peppers (depending on how hot)
1 tbsp lime or lemon juice
1 tbsp soy sauce
2 cloves minced garlic
1/4 tsp cinnamon
1/8 tsp cloves
Mix all ingredients together, if you put in a blender or food processor, even better. Pour it over about 2 pounds of chicken thighs or legs. Let marinate for at least 2 hours. Cook over medium heat on greased grill, turning occasionally and brushing with remaining marinade. Takes about 30 minutes on grill.
