Honey Glazed Chicken, Melon and Avocado Salad
150g Chicken Breast
30g butter
10g honey
100g rockmelon or honeydew
50g celery
60mls lemon juice
40mls orange juice
60mls olive oil
10g sugar
5g Dijon mustard
Salt and Freshly ground pepper
1 orange, zested and segmented
1 Avocado, ripe and firm
Assortment of washed lettuce leaves
# Cut chicken breasts into 2.5cm cubes. Heat butter and honey in a frying pan. Add chicken pieces and fry gently until golden and well coated with honey butter glaze. Remove from pan and allow to cool.
# Cut the melon into balls, using a parisienne cutter. Cut the celery into fine julienne.
# Prepare dressing by whisking all the ingredients in a bowl.
# Simmer orange zest in sugar and water for approx. 5 minutes.
# To serve salad, cut avocado in half, remove stone, peel and cut into bite size pieces. Place lettuce on a suitable plate; arrange chicken, avocado, melon and celery on top and spoon over dressing. Garnish with orange segments and zest.
