Grated Pumpkin Noodle Fritters
Age: 12 months +
Serves:
8 fritters
2 cup Grated raw pumpkin
1 cup Grated potato (squeeze off excess fluid)
200g Singapore or Hokien noodles sliced
2 Eggs beaten
1/2 cup Self-raising flour
1. Heat a large non-stick fry pan with a splash of oil.
2. Mix all ingredients together.
3. Add a splash of milk if mixture is too dry.
4. Spoon 2 Tablespoons of mixture onto pan per serving.
5. Cook for 2-3 minutes on each side until golden brown.
Makes approximately 8 fritters.
