Gooey Chocolate Pudding
125g good chocolate
125g unsalted butter
3 large eggs
150g sugar
35g plain flour
butter and flour for ramekins
# Preheat the oven to 200C.
# Melt the chocolate and butter in a bowl over water.
# Whisk the eggs, sugar and flour together until blended, then whisk in the melted chocolate and butter.
# Grease four 250ml ramekins with butter and flour them lightly – tapping them to cover them evenly and to remove any excess. Pour the mixture into the ramekins and bake for 10-12 minutes until the tops crack and the edges are set. Serve immediately. They should be gooey in the middle too.
