Gingerbread Men
Makes: 8
125g unsalted butter, at room temperature
1/2 cup brown sugar
1 egg
2 tablespoons golden syrup
2 cups plain flour, sifted
2 teaspoons ground ginger
1 teaspoon bicarbonate of soda
1/2 cup pure icing sugar
Lollies, to decorate
1. Using an electric mixer, cream butter and sugar until pale and creamy. Add the egg and golden syrup and beat until just combined. Fold in flour, ginger and bicarbonate of soda, stirring until mixture comes together. Put onto a lightly floured surface and knead lightly until a smooth dough forms. Cover in plastic wrap and refrigerate for 2 hours.
2. Preheat oven to 180°C. Line a baking tray with baking paper.
3. Roll dough, between two sheets of baking paper, to a thickness of 1cm. Using a gingerbread man cutter, cut 8 shapes from dough. Place on prepared tray, well spaced as they will spread slightly. Bake for 8-10 minutes. Cool on tray for 5 minutes before transferring to a wire rack to cool completely
4. Mix icing sugar with enough water to form a paste. Pipe or spoon eyes and mouth onto gingerbread. Decorate with lollies of your choice for the suit.
