Ginger and Lemon Anzacs
1 cup rolled oats
1 cup coconut
1 cup plain flour
1 teaspoon ginger powder
1 teaspoon grated lemon rind
150g butter, chopped
1/4 cup golden syrup
1/2 teaspoon of bicarb soda dissolved in 1 tablespoon hot water
Combine rolled oats, coconut, flour, sugar, ginger and lemon.
Place butter and syrup in a pan, heat until butter is melted and the mixture is combined.
Add dissolved bicarb.
Pour the liquid ingredients over the combined oats and mix well.
Take tablespoon sized portions of mixture and roll into a ball.
Place onto greased and lined trays, allowing room for spreading.
Flatten slightly with a fork. Bake at 180C for 12 – 15 minutes.
Cool on the trays for 10 minutes.
Transfer to a wire rack to cool completely.
Keep in airtight container.
