Fruit Salad Ice-Cream Sticks
Makes about 16
1 x 375m can evaporated milk
1 cup caster sugar
juice of 1 orange
juice of 1 lemon
2 bananas, mashed
pulp of 4 passionfruit
1 1/2 cups frozen raspberries, thawed
1. Place the can of evaporated milk in the freezer for 1-2 hours. Place chilled milk in the large bowl of an electric mixer and beat the chilled milk on high until thick and fluffy. Add sugar gradually and beat well between each addition.
2. Add the juice, bananas, passionfruit and raspberries and stir gently with a large metal spoon until combined.
3. Use plastic or paper cups as moulds for the ice-creams. Fill 2/3 full of fruit mixture and place a wooden craft stick in the centre of each. Place cups on a tray and put in the freezer for several hours or overnight to set. Snip or tear the cups to free the ice-creams easily.
