Fruit Coconut Bubble Slice
2 cups (140g) shredded coconut
3 cups (90g) Rice Bubbles
2/3 cup All-Bran
1 cup (250g) chopped glace apricots
1/2 cup chopped glace pineapple
1 cup (125g) chopped pecans or walnuts
125g butter
1/2 cup coconut cream
1/2 cup honey
1/3 cup raw sugar
Grease 20cm x 30cm lamington pan. Combine coconut, Rice Bubbles, All Bran, fruit and nuts in bowl. Combine butter, coconut cream, honey and sugar in pan, stir over tow heat, without boiling, until butter is melted and sugar dissolved.
Bring to boil, simmer, uncovered, without stirring, for about 5 minutes or until mixture resembles a thick syrup. Stir hot mixture into dry ingredients; mix well.
Press into prepared pan, refrigerate until firm
