Fruit and Nut Health Slice
1 cup honey
1 Tablespoon glucose
2 egg whites
2 cups bran flakes
1 cup sunflower seeds
1 cup shredded coconut
1 cup mixed dried fruit
1/2 cup pine nuts
1/2 cup pumpkin seeds
1/2 cup toasted pecans
1/2 cup toasted walnuts
Combine honey and glucose in a small saucepan and bring to the boil. Reduce heat to low and simmer for approximately 5 minutes. Set aside.
Whip the egg whites until soft peaks, then whisk in the honey mixture whilst hot. Add the remaining ingredients and mix well.
Place mixture into a lined lamington tin and allow to set in the refrigerator.
Cut into fingers and store in air tight containers.
Great for kids lunches and an afternoon snack.
