Fluffy Chocolate Mousse
60g (2 oz) butter
100g (3 1/2 oz) dark chocolate
3 eggs – separated
1 Tbsp orange rind (optional)
1 Tbsp Tia Maria
2 Tbsp cream, whipped
1/4 cup warm water
# Melt the butter with the chocolate over a double saucepan, stirring constantly. Cool to room temp, stir in orange rind and Tia Maria
# Beat egg yolks with 1/4 cup warm water in an electric mixer until light and fluffy (approx 5 minutes). Fold egg mixture into chocolate mixture until combined.
# Beat egg whites with sugar until stiff. Fold into chocolate mixture and pour into 4 glasses; refrigerate for 2 hours. Decorate with cream.
