Five-Minute Peanut Fudge
Makes approximately 340g (12oz) fudge
Equipment:
1 large heavy based saucepan
1 pudding basin to fit inside the saucepan
1 wooden spoon
1 lightly greased shallow tin, 15cm (6in) square
1 sharp knife
2/3 (150ml / 1/4pt) sweetened condensed milk
2 Tablespoons smooth peanut butter
4 drops vanilla essence
1 1/2 cups (225g / 1/2 lb) icing sugar
1. Put the condensed milk and peanut butter into the pudding basin and mix well with the wooden spoon.
2. Stand the basin in a pan of boiling water so that the water comes about halfway up the sides of the basin. Cook for about 5 minutes, stirring all the time. Remove from the heat.
3. Add the vanilla essence and the icing sugar, then turn the fudge into the greased tin and place in the refrigerator. Cut when cold.
