Feta, Chive and Spinach Dip
2 cup plain yogurt.
1/2 cucumber.
1 cup crumbled feta cheese.
1/4 cup fresh chopped chives.
1/4 cup chopped fresh spinach leaves.
2 cloves garlic, minced.
Drain yogurt in a sieve lined with cheese cloth for 3 hours or until yogurt is reduced to 1 and 1/3 cups. scrub and peel cucumber and grate into a sieve. let it stand for 30 mins. Rinse then squeeze lightly discarding liquid. combine everything and mix well. season with salt and pepper. serve with lots of crusty bread.
