Date and Pecan Rolls
1 cup dates, cut in half
1 cup brown sugar
1/2 cup pecans, cut in half
1/2 cup sultanas
1 tablespoon butter
1 teaspoon bi-carbonate of soda
1 cup boiling water
2 cups plain flour
1 egg, lightly beaten
1. Pre-heat oven to 180deg.C. Grease two round date roll tin with spray oil or butter.
2. Place dates, sugar, pecans. sultanas, butter, bi-carbonate of soda and water into a mixing bowl and mix well. Add flour and egg and stir only until well blended.
3. Spoon mixture evenly between the two tins and place upright in oven. Cook for about 35-40 minutes, or until a wooden skewer comes out clean.
4. Remove tins from oven and leave on cooling rack for 20 minutes before removing ends pieces and gently sliding out the rolls. Leave on rack to cool completely before storing in a well sealed container.
