Danish Apple Cake
125g butter
1/2 cup castor sugar
1 teaspoon grated lemon rind
1 egg
1 cup self-raising flour
2 medium apples
1 teaspoon ground ginger
1 teaspoon cinnamon
1 Tablespoon brown sugar
1 dessertspoon lemon juice
2 Tablespoons sultanas
1 Tablespoon chopped walnuts
Whipped cream to serve
Cream butter and sugar with lemon rind. Add egg and beat well until fluffy. Stir in sifted flour and mix well. Spread half the mixture in the bottom of a well greased 8″ spring form tin. Peel, core and thinly slice the apples and place half on top of the cake batter in the tin. Combine the spices and brown sugar and sprinkle evenly over apple, then sprinkle the lemon juice. Top with sultanas and the remainder of the apple. Sprinkle over chopped walnuts. Cover with remainder of batter. Bake in moderate oven for 50 minutes or till golden brown and cooked through. Serve warm or cold with whipped cream.
