Custard Orange Cake
2 cup (250g) Self Raising Flour
1/3 cup (40g) Custard Powder
80g butter, chopped
1 1/3 cup (340g) Castor Sugar
3 eggs
2 tsp finely grated orange rind
1 cup (250ml) orange juice
Cream Cheese Frosting:
125g cream cheese, softened
2 Tbsp icing sugar
1. Preheat the oven to 180C.
2. Grease a deep 23cm round cake tin and line the base with baking paper.
3. Sift the flour and custard powder into a bowl.
4. Add the butter and sugar.
5. Rub the butter into the flour mix until it resembles fine bread crumbs.
6. Add the eggs, juice and rind and mix until smooth. Pour into prepared tin and bake for 50 minutes, or until a skewer comes out clean when inserted into the centre of the cake.
7. Leave to cool in the tin for 5 minutes before turning out onto a wire rack to cool.
Cream Cheese Frosting:
Beat the cream cheese and the icing sugar together until smooth. Spread over the cake.
Decorate with thins strips of orange rind if desired.
