Curried Sausages
Serves 4
12 sausages, grilled
1 large onion, finely sliced
1 1/2 tablespoons oil
2 tablespoons fruit chutney
1 1/2 cups mild curry sauce
1 tablespoon plain flour
1 tablespoon butter
Salt and pepper
Chopped coriander or basil
In a non-stick pan fry the onions in the oil until lightly browned. Add the fruit chutney and curry sauce and simmer for 5-7 minutes. Mash the flour into the butter and stir into the sauce to thicken. Season to taste and add the sausages. Warm in the sauce, then stir in the herbs.
Serve with rice, mashed potatoes or mashed sweet potato, and extra fruit chutney.
