Crunchy Choc-Bubble Slice
1 1/2 cups rice bubbles
1 cup roasted unsalted peanuts
1 cup mixed fruit
1 cup coconut
Combine in a large bowl:
100g packet white marshmallows
60g butter
Melt over a low heat stirring constantly do not boil, pour in to rice bubble mix and combine
Press into a prepared pan.
Chocolate Icing:
1 1/2 cups icing sugar
1 tablespoon cocoa
1 tablespoon soft butter
1 tablespoon milk (approximately)
Sift icing sugar and cocoa together in a small heat proof bowl, stir in butter and enough milk to make a stiff paste, stir over hot water till spread able, spread over rice bubble mix and chill to ready to eat.
