Creamy Pear Slice
Base:
1/2 cup butter
1/3 cup sugar
1 tsp vanilla
1/2 cup S.R. flour
1 1/2 cups of desiccated coconut
To Make Base: Cream butter and sugar, add vanilla. Add flour and coconut, mix well. Press into a lamington tin or large flat base casserole dish.
Fruit Layer:
1 large tin of pear halves
To Make Fruit Layer: Slice pear halves approx .5-1cm thick, layer evenly over base.
Cream Layer:
300ml sour light cream
1 Tbsp sugar
1 tsp lemon juice
1 egg, lightly whisked
To Make Cream Layer: Combine all together until smooth, then pour over pears.
Cinnamon/Nutmeg Topper:
1 Tbsp sugar
1 tsp cinnamon or nutmeg
Cinnamon/Nutmeg Topper: Combine and sprinkle over the top.
Bake at 200c for 20 minutes, then reduce to 190c and cook until set (very slightly browned – do not over cook as it can dry it out too much).
