Cornbread
120g cornmeal
180g plain flour, sifted
60g sugar
1tsp baking powder
1 egg
360ml milk
60g melted butter
Sift dry ingredients into a bowl. Mix egg and milk and add to dry mix. Stir well, fold in melted butter and beat. Grease and dust with flour an 8″ square or 9″ round cake tin. Scrape batter into pan and bake 20-25 mins until golden brown in a 210 C oven.
