Coconut Macaroons
200g flaked coconut
180g sweetened condensed milk
1 tsp vanilla extract
2 large egg whites
1/4 teaspoon salt
Preheat oven to 170°C. Line two baking trays with baking paper. In a large bowl combine coconut, condensed milk and vanilla extract.
In a separate bowl beat egg whites and salt until firm peaks form. Fold 1/2 egg whites into mixture, then fold in remaining.
Drop tablespoonfuls of mixture onto a baking tray allowing room for spreading. Top each with a small tablespoonful of mixture and bake for 25 minutes or until golden. Cool on trays before removing with a spatula. Serve with Iced Coffee.
