Chocolate, White Chocolate and Almond Brownies
125g butter
Butter for greasing
2 Eggs
1/3 cup of ground almonds
65g plain flour
1/2 teaspoon baking powder
2 tablespoons Dutch-process cocoa
125g dark chocolate, melted
100g white chocolate, melted
Using an electric mixer, beat butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each. Stir in ground almonds, sifted flour, baking powder and cocoa and mix well until well combined. Stir in melted chocolate and white chocolate, then spoon in to a greased baking tin. Bake at 170c for 40 mins, or when you stick in a skewer and it comes out clean.
Leave in tin for about 5 minutes to cool a bit, and then turn on to a wire rack to cool completely.
Cut in to pieces.
