Chocolate Pecan Cake
1 1/4 cup self raising flour
50g dark chocolate (melts/bits)
1 tablespoon standard flour
150g butter
1/4 cup cocoa powder
1/2 cup soft brown sugar
1/4 tablespoon milk powder
1/2 cup milk
1/2 cup ground pecans
2 eggs, lightly beaten
1/4 teaspoon baking soda
2 tablespoons golden syrup
1. Sift flours, cocoa, baking soda and milk powder. Add pecans and make a well in the centre.
2. Combine chocolate, brown sugar, butter and golden syrup in a pot, melt on low heat until the sugar is dissolved.
3. Gradually add butter mixture to the dry ingredients. Combine. Add milk and eggs and stir until smooth.
4. Grease a bunt cake pan (ring cake). Pour mixture into greased pan and bake in pre-heated 180°C oven for 35-40 minutes. Leave cake in the tin for ten minutes after baking before turning onto a rack to cool. Ice with icing of your choice, or sift some icing sugar over the top.
