Chocolate Mousse
4 Eggs
200g Chocolate
5 Tablespoons of hot strong coffee
1. Separate the eggs. Whisk the whites until stiff.
2. Grate the chocolate and mix in the hot coffee. It should melt the chocolate. If it does not, heat gently until the chocolate melts.
3. When melted, whisk in the egg yolks.
4. Fold the egg whites into the chocolate mix.
5. Decant this mix into a bowl or individual bowls and put in the fridge to chill. It is ready as soon as it has cooled.
