Chocolate Mousse
Serves 1
2/3 cup (110g) dark cooking chocolate
1/2 cup (125ml) thickened cream
2 Tablespoons caster sugar
icing sugar for dusting
1. Melt chocolate in a double boiler. Set aside to cool slightly.
2. Place cream and sugar into small bowl beat until soft peaks form. Carefully fold cooled chocolate into whipped cream. Divide evenly between cocktail glasses. Place into refrigerator until firm.
3. Serve dusted with icing sugar
