Chocolate Fudge Cookies
125 grams butter, chopped
1 teaspoon vanilla essence
1 1/4 cups brown sugar, firmly packed
1 egg
1 cup plain flour
1/4 cup self raising flour
1 teaspoon bicarbonate of soda
1/3 cup cocoa powder
1/2 cup raisins
3/4 cup macadamia nuts, toasted and chopped coarsely
1/2 cup dark Choc Bits
1/2 cup dark chocolate melts, halved
Preheat oven to moderate 180 degrees. Line three oven trays with baking paper. Beat butter, vanilla, sugar and egg in medium bowl with electric mixer until smooth. Stir in combined sifted flours, soda and cocoa; stir in raisins, nuts and both chocolates.
Drop rounded tablespoons of mixture onto prepared trays about 4cm apart; press each with a fork to flatten the tops slightly. Bake in moderate oven for 10 minutes. Stand for 5 minutes; transfer cookies to a wire rack to cool. Makes about 20 cookies.
Note: Other nuts, such as walnuts or pecans, can be used instead of macadamia.
