Chocolate Fairy Cakes
150g self raising flour
150g brown sugar
25g cocoa powder
1/4 tsp salt
240ml water
30ml light olive Oil
1 Tbsp vinegar
1 tsp vanilla extract
1. Preheat the oven to 180C and place 12 paper fairy cake cases on a baking tray.
2. In a large mixing bowl, mix together all the dry ingredients. Make a well in the centre then add the remaining “wet” ingredients. Mix well then beat with a wooden spoon until smooth.
3. Three quarter fill the paper cases with the mixture and bake for 20-25 minutes. Cool on a wire rack.
