Chocolate Cupcakes
100g dark chocolate
1 tablespoon cocoa
1/2 cup milk
1 teaspoon vanilla extract
60g melted butter
2 lightly whisked eggs
1/2 cup caster sugar
1 cup sifted self-raising flour
Icing:
1 cup icing sugar
2 tablespoons cocoa
2 tablespoons boiling water
Decoration:
White Choc-Chips
Preheat the oven to 180°C (fan forced). Melt dark chocolate, cocoa, milk and vanilla extract over low heat, stirring constantly. Combine melted butter, lightly whisked eggs, caster sugar, sifted self-raising flour, then fold through the chocolate mixture. Line a 12-hole, 1/2-cup capacity muffin tin with large patty cases, then half-fill each case with the mixture. Bake in the preheated oven for 15-20 minutes.
Icing:
Combine icing sugar and cocoa with boiling water. Ice when cakes are cool and top each with a white choc-chip.
