Chocolate Cornflake Slice
Makes 16 pieces
1 cup self-raising flour
3 Tbsp cocoa
1 cup cornflakes
1/2 cup desiccated coconut
1/2 cup sugar
100g dark chocolate, chopped
160g unsalted butter, melted
2 tsp vanilla extract
Extra 100g dark chocolate, melted
1. Preheat oven to 180°C. Line a lamington tin with baking paper. Sift the flour and cocoa into a large mixing bowl, add the cornflakes, coconut, sugar and chocolate, and stir to combine.
2. Make a well in the centre of the dry ingredients, add the butter and vanilla, and stir to combine. Put the cornflake mixture in the tin and press down with the back of a spoon.
3. Bake for 20-25 minutes or until golden and crisp. Remove from the oven and stand on a wire rack. Top with the melted chocolate and spread to the edges of tin. Stand for 1 hour or until the chocolate is set. Cut into squares or fingers.
