Chocolate Biscotti
5 tablespoons margarine
1/2 cup caster sugar
1 egg
1/2 teaspoon vanilla essence
3/4 cup plain flour
1/4 cup cocoa
1/2 teaspoon baking powder
1/8 teaspoon bi-carb soda
1/2 cup toasted whole almonds
50g cooking chocolate, chopped
Preheat oven to 180C.
Cream margarine and sugar, add the egg and vanilla. Combine flour, cocoa, baking powder and bi-carb soda with the chocolate in a food processor. Combine both mixtures to form a soft dough. Add the almonds. Shape dough into a log 31cm long and 6cm in diameter. Bake on a baking sheet approx 30 minutes. Allow to cool before slicing pieces on a diagonal and returning to oven at 150C for 10 minutes on each side.
Makes approximately 18-20 slices.
