Choc-Chip Cookie
125g unsalted butter, softened
1/2 cup loosely packed Brown Sugar
1/4 cup white sugar
1 egg
1 tsp vanilla
1 1/4 cups plain flour
1/2 tsp bicarb powder
1/4 tsp salt
1 cup choc chips
1/4 cup crushed walnuts (optional)
Grease baking tray, preheat oven to 180c.
Mix butter and sugars together until light and smooth. Add egg and vanilla and continue to beat until smooth.
Sift flour, bicarb and salt together and then add to mixture, mix until blended.
Stir in choc chips and walnuts.
Drop tablespoons of dough onto tray approx 5cm apart. Bake in oven for 9-12 mins or until gold around the edges (they wont actually be set at this stage).
Cool 5 mins then put on cooling rack.
Makes about 18 large cookies.
These are the really soft chewy fudgy cookies, if you like them hard and crunchy cook them for a bit longer.
