Choc Banana Bread
2 cups plain flour
2 teaspoons baking powder
125g unsalted butter, softened
1 cup caster sugar
4 ripe bananas, mashed [i only use 2 if they’re big]
2 eggs, lightly beaten
1 teaspoon vanilla extract
175g/1 cup good quality chocolate chips
Preheat oven to 180 C and line a 19×11 loaf tin.
Sift flour and baking powder into a large bowl.
Mix all the other ingredients in a separate bowl.
Combine with dry ingredients and stir gently to combine, being careful not to over mix.
Pour into prepared tin and bake for approx. 1 Hour 15 mins or until skewer comes out clean. Cool in the tin for 5 minutes before turning out onto wire rack to cool.
Serve in thick slices with butter. Makes 8 – 10 slices.
