Chilli Potato Soup
2 slices bacon
3/4 cup chopped onion
3 medium potatoes, diced
1 teaspoon salt
2 cups boiling water
2 1/2 cups milk
1 teaspoon chilli powder
1/4 teaspoon oregano
1/2 teaspoon garlic salt
A few pepper grains
Fry bacon in a skillet until crisp. Drain on absorbent paper, crumble and set aside. Add onion to bacon fat and cook until soft. Put onion, potato, salt and water into an electric cooker. Cover and cook 4 to 6 hours. Puree contents of cooker and return to cooker. Add milk and seasonings, stir. Cover and cook on Low 1 hour. Top each serving with crumbled bacon and shredded Parmesan cheese.
