Chicken Stroganoff

Cooking time: 15 minutes
Serves 6
30g butter
2 tablespoons oil
2 onions, thinly sliced
2 cloves garlic, crushed
1 kg chicken thigh fillets sliced
250g mushrooms, sliced
2 teaspoons sweet paprika
1 cup sour cream
1/4 cup tomato paste
freshly ground black pepper
1. Heat butter and oil together in a large frying pan. Cook onion and garlic until onion is tender.
2. Add chicken pieces. Cook, turning, until chicken is tender. Stir in mushrooms and paprika. Cook until tender.
3. Stir in combined sour cream, tomato paste and pepper. Simmer gently until heated through. Sprinkle with parsley. Serve with boiled rice or pasta.
