Chicken Dinner Parcel
Makes 8
1 1/2 cups frozen mixed vegetables
2 cups chopped cooked chicken
1 cup grated tasty cheese
1/4 cup mayonnaise
1 tablespoon snipped chives
seasonings to taste
2 sheets frozen puff pastry, thawed
1 egg, beaten
sesame seeds
1. Place frozen vegetables in a microwave-safe bowl. Cook on HIGH (100%) power for 1 minute. Drain well. Allow to cool.
2. Place vegetables, chicken, cheese, mayonnaise, chives and seasonings in a large bowl. Stir well to combine.
3. Cut each sheet of pastry into 4 even squares. Brush edges lightly with water. Spoon 1 tablespoonful of the chicken mixture onto one half of each square. Fold pastry over to form a triangles. Seal edges with a fork.
4. Place parcels on a baking tray. Cut a steam vent with a knife. Brush lightly with egg. Sprinkle with seeds. Bakes in a hot oven (200C) for 15 to 20 minutes or until golden and puffed. Serve with salad.
