Chicken Couscous Dinner
Age: 10 months +
3/4 cup water or no added salt chicken stock
1/2 cup tiny cubes of butternut pumpkin
1/2 cup baby frozen peas
1/4 cup uncooked couscous
1/4 cup tiny cubes of cooked chicken
Put the water or chicken stock in a small pot and start heating. Add the butternut, cut in 5mm cubes, and the frozen peas.
Simmer for 12 minutes, by which time the vegetables should be almost cooked.
Add the couscous and the cubed cooked chicken (previously simmered chicken is better than precooked roast chicken), make sure all the couscous is under the surface of the liquid, bring the mixture back to the boil and simmer for 30 seconds.
Turn off the heat, make sure the lid is on the pot, and leave to stand for 5 minutes, until all the liquid is absorbed by the couscous, and the vegetables are tender.
