Chicken and Soba Noodle Salad
Serves 4
300g packet soba noodles, cooked and cooled
2 cups cooked, shredded chicken (see variation)
2 Lebanese cucumbers, finely chopped
1 small red onion, chopped
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh coriander
Dressing:
1 tablespoon teriyaki sauce
1 tablespoon sweet chilli sauce
juice of 1 lemon
2 teaspoons grated ginger
2 teaspoons fish sauce
2 cloves garlic, crushed
1. Combine all salad ingredients in a large bowl.
2. Prepare Dressing: Whisk all ingredients together until well combined. Toss through salad. Serve hot or cold.
Variation: Use shredded cooked pork or duck.
