Chicken and Macaroni Bake
2 cups macaroni
500gm chicken, finely chopped
1 onion, finely diced
1 carrot, finely diced
1 zucchini, finely diced
3 bacon rashers, diced
1 tin tomato soup
1/2 cup cream or sour cream
1 1/2 cups grated cheese
Cook macaroni, drain and set aside. Cook chicken and set aside. Cook bacon and diced veggies for about 10 minutes until veggies soften. Add chicken back in for a couple of minutes. Combine macaroni, chicken, veggies, most of the cheese, soup and cream in an ovenproof dish. Season to taste. Sprinkle over remaining cheese. Cook in moderate over for approximately 25 minutes.
