Chewy Chocolate Coconut Slice
1 cup brown sugar (firmly packed)
125g butter (melted)
1 egg (beaten)
1 teaspoon vanilla essence
1/2 cup plain flour
1/4 cup self raising flour
3 tablespoons cocoa powder
1/2 cup coconut (desiccated)
1. Grease and paper line a slice tin.
2. Combine butter, brown sugar, egg and vanilla essence in a bowl.
3. Sift together plain flour, self raising flour and cocoa powder.
4. Add with coconut to butter mixture. Mix together well.
5. Spread mixture evenly over base of tin.
6. Bake at 180°C for 30 minutes until firm.
7. Ice while hot and cut when cool.
Icing
1 cup icing sugar (confectioners sugar)
3 tablespoons cocoa powder
10g butter (melted)
1 1/2 tablespoons hot water
1. Sift together icing sugar and cocoa.
2. Add butter and water. Mix to a spreadable consistency.
3. Spread on slice while still hot. Sprinkle coconut on top.
