Cheesy Beef Pie
The crust of the pie is well flavoured mince , good to serve either hot or cold.
Mince Crust:
500grams of mince
1 small onion grated
2 tablespoons of low carb tomato sauce
1 teaspoon of dried oregano
Salt pepper to taste
Filling:
1 tablespoon of oil
1 clove of garlic (optional)
4 small zucchinis thinly sliced
125g of button mushrooms sliced
185g cream cheese, softened
2 eggs
salt and pepper
2 tablespoons of grated cheese
Method For Crust:
Combine all ingredients for crust and press firmly into a 23cm (9 inch) pie flan.
Bake mince crust in a moderately slow oven for 20 minutes. Then remove and drain (shrinks a little).
Method For Filling:
Heat oil in frypan and cook, garlic, zucchinis, and mushrooms for 3-4 minutes. Stirring -they should be tender but still firm.
Beat cream cheese until smooth; then beat in eggs, Stir in vegetables with salt and pepper to taste.
Spoon into mince crust, smooth top and sprinkle with cheese.
Return to the oven for 30 minutes, or until filling is firm.
Cool for 5 minutes before cutting in wedges to serve.
