Cheese and Ham Chicken with Asparagus and Rocket
1 leek, sliced
4 (560) single chicken breast fillets (without skin)
120g Weight Watchers Block Cheese, cut into 30g portions
100g shaved ham
steamed asparagus and baby rocket leaves, to serve
1. Preheat oven to 200°C. Heat a non-stick frying pan over medium heat. Add leek. Cook, stirring, for 2-3 minutes.
2. Use a sharp knife to cut a slit in the side of each fillet. Divide cheese, ham and leek between pockets. Secure with a toothpick.
3. Heat a large non-stick frying-pan over high heat. Add the chicken and cook for 2 minutes each side or until golden. Transfer to a baking tray. Bake for 12-15 minutes or until chicken is cooked. Remove from oven and set aside for 5 minutes to rest.
4. Place asparagus and rocket on serving plates. Top with chicken. Serve.
