Caramelised Onion and Corn Bread
2 tablespoons Sanitarium Macadamia nut oil
3 onions, finely sliced
1 tablespoon brown sugar
3/4 cup polenta
1 cup brown rice flour
2 teaspoons baking powder
1/3 cup linseeds
1/4 cup psyllium husks
1 tablespoon fresh thyme
1 cup Sanitarium So Good soymilk
1 egg, lightly beaten
1. Place oil in a non-stick frying pan. Add onions and brown sugar and sauté over high heat for 5 minutes or until golden brown.
2. Place polenta, rice flour, baking powder, linseeds, psyllium husks, thyme and three quarters of the onion mixture in a large mixing bowl and stir until combined.
3. Combine Sanitarium So Good and egg and stir into dry ingredients. Spoon into a lightly greased, lined loaf tin and press down firmly.
4. Bake in a hot oven, 200°C, for 20 minutes, top with remaining onions and bake a further 15 minutes. Slice and serve warm.
