Caramel Date Almond Slice
1 cup self-raising flour
1 cup brown sugar, firmly packed
1 cup desiccated coconut
125g margarine, melted
1/3 cup flaked almonds
Topping:
1 x 395g can sweetened condensed milk
30g margarine
3/4 cup chopped pitted dried dates
2 tablespoons golden syrup
Grease a 19cm x 29cm rectangular slice pan; line base and two long sides with baking paper.
Combine flour, sugar and coconut in a large bowl. Stir in margarine; mix well. Press mixture over base of pan. Cook in a moderate oven, 180°C, for about 15 minutes or until lightly browned.
Topping: Combine condensed milk, margarine, dates and golden syrup in a small heavy-based pan. Cook, stirring, over a low heat until mixture boils. Simmer, stirring, for about 5 minutes or until mixture turns golden brown. Spread topping over base; sprinkle with almonds. Cook for a further 10 minutes or until almonds are lightly browned. Cool slice in pan before cutting into fingers.
