Candied Orange Cake
125g margarine
3/4 cup caster sugar
grated rind of 1 orange
1/2 cup milk
2 eggs, beaten
1 1/2 cups S.R. flour
1/2 cup candied orange peel, chopped
candied, julienne orange for decoration
Preheat oven to 180C.
Cream margarine and sugar. Add orange rind, eggs, sifted flour and milk, beating well after each addition. Fold in candied orange peel. Place in greased cake tin (preferably Teflon coated) and bake approx 50-60 minutes. Leave cake to cool in the tin before turning out. Dust with icing sugar and top with candied julienne orange.
