Buttermilk Pancakes
2 cups self-raising flour
2 teaspoons baking powder
2 eggs
3 cups buttermilk
60g melted butter
butter for frying
1. Sift flour and baking powder into a bowl. Whisk in eggs, buttermilk and butter.
2. Grease small frying pan with butter, add 1/3 cup of mixture and cook until bubbles appear. Turn over and cook for another min. Repeat (makes about 12 pancakes). Serve with fresh fruit and maple syrup.
