Butter Cake
150g soft butter
150g sugar
150g plain sifted flour
3 eggs (each weighing 50g)
some lemon zest or vanilla essence
pinch salt.
Cream butter, sugar, salt and lemon until white and creamy. Beat eggs and add in small quantities at a time alternating with the flour. Use a metal spoon to do this. Put into a prepared loaf tin, hollowing a little in the centre with the back of the spoon. Bake it for 1 hr in a 150ºC oven till light brown or when a skewer inserted comes out clean.
